Why do you think Vegas is the ultimate culinary destination?
The mecca of the greatest chefs from around the world and around the country gathered together in one city build for entertainment and fun. It doesn’t get any better than that.

Describe your ultimate night out in Las Vegas.
After spa treatments, I would go to Searsucker at Caesars Palace for small bites and cocktails – then stroll over to Herringbone at ARIA for an incredible dinner with chef Geno (Bernardo); off to see J Lo; then to late night at Omnia with Calvin Harris and bottle service with friends; hitting the roulette and blackjack tables after.

What can guests expect when they dine at your Las Vegas restaurants, Herringbone and Searsucker?
Full Sensory Entertainment – the touch; the smell; the taste; the visuals; the sounds of glass clinking…

Are there any fall food trends you will be incorporating into either restaurant’s menu?
Just keeping it light and playful – more crudos – when guests are dining in Vegas, they’re on their A game – they want to look good and feel good.

Why do you think Vegas is the ultimate culinary destination?
There are just so many great chefs and great restaurants both on and off the Strip. More than that, they say variety is the spice of life and Las Vegas is certainly the ultimate when it comes to offering a variety of dining choices both high-end and casual.

Describe your ultimate night out in Las Vegas.
Another great thing about Vegas is that one person’s ultimate night out can be completely different than another’s. I’m a huge boxing fan so big-fight weekends are the ultimate. Ringside seats, dinner, making the rounds at Marquee or Tao Nightclub, and finishing off the night with a little blackjack or roulette at The Cosmopolitan.

What can guests expect when they dine at your Las Vegas restaurant, Beauty & Essex?
I hope a truly memorable experience that is high in energy, yet intimate, delicious and approachable with hospitality as a priority.

Are there any fall food trends you will be incorporating into the restaurants’ menu?
I don’t really follow food trends. Of course, we always keep our eye on what’s out there, but typically, my chefs and I kind of operate like an old-school rock band – we just get in the studio, shut the doors, plug in, and play.
