Why do you think Vegas is the ultimate culinary destination?
Eating great, interesting food has become entertainment that’s expected for any major destination and Vegas is the ultimate destination! It’s like the Disneyland of food with a unique collection of incredibly talented chefs from all around the world.

Describe your ultimate night out in Las Vegas.
Well, I’d probably be working all day at Border Grill, so I’d start by inviting friends to come over to Border Grill in The Forum Shops at Caesars and sip a few of our exciting, new silver tequilas on ice with lime (I’m a purist). Then I’d go out to see stand-up comedy (there are awesome comics performing in Vegas like Kathy Griffin or Carrot Top) or I am always up to see a Cirque du Soleil performance. After a show, I love to grab dinner at my favorite Thai restaurant in the world – Lotus of Siam, and then early to bed so I can get up at sunrise and go for a run on the Strip – it’s surreal before anyone is out there.

Put on scuba gear (if you’re certified) and swim in the shark tank – WITH SHARKS – at Mandalay Bay, and then just a few steps away, you can celebrate with fish tacos and a margarita on the patio at Border Grill.

What can guests expect when they dine at your Las Vegas restaurants?
We like to WOW every guest with great service and delight their palates with exciting, flavorful food and fresh, handcrafted drinks.

Are there any fall food trends you will be incorporating into either restaurants’ menu?
We’re working on a new sweet potato and black bean taco that has melted cheese between the handmade corn tortillas – it’s vegetarian food that satisfies even die-hard meat lovers.

Why do you think Vegas is the ultimate culinary destination?
There is such a concentration of talent and professionalism in one place, which is simply unheard of. Chefs from all over the world who have been at the top of their game for years are all here – it’s really inspiring to experience. Las Vegas’ restaurants appreciate their guests, and customers who visit here want to experience world-class restaurants.

Describe your ultimate night out in Las Vegas.
I think it would start with some rosé poolside and then dinner at a few different places, trying multiple dishes from different restaurants. Then maybe take in a late cocktail in The Cosmopolitan’s Talon Club before seeing some live music or taking a walk through the casino.

What can guests expect when they dine at your Las Vegas restaurants, Scarpetta and D.O.C.G.?
D.O.C.G. is a rustic, casual experience serving lunch and dinner. It has the best sandwiches, pizza and pastas on the Strip. Scarpetta is a more elevated experience – fine dining, but still approachable and fun. The views are amazing and the service is excellent. I’m very proud of the team there; they are consummate professionals serving some of the best Italian food in the country.

Are there any fall food trends you will be incorporating into either restaurants’ menu?
I am really loving incorporating more vegetable dishes among the signature items. The older I get, the garden and market inspire me more and more.
